I’m not a great baker. In fact, I usually stick to the same handful of recipes I know well. But this one is so insanely easy, I thought I’d give it a go. Also, this is not my recipe. In fact, I’ve seen it floating around social media for a couple years so I’m not sure who actually to give credit to. But anyway, they are soooooo delish! If you’re a cookie fan, you simply must try them.
I ordered my ingredients from Thrive market, but you can use whatever brand you like. Here we go. You’ll need:
(1) 15 oz can organic pumpkin
(1) box organic spice cake mix
(1) bag organic chocolate chips
Preheat your oven to 350F.
Blend pumpkin and spice cake mix until smooth. Fold in chocolate chips.
Drop onto parchment paper with overflowing 1″ cookie scoop and bake until golden brown. Was about 6-7 minutes for me, but our oven is convection so take that into consideration if you have a conventional oven.
Cool on baking rack (although they are reeeeal scrumptious when still warm). Store in airtight container.
So tasty with a hot coffee or autumnal tea watching the snow fall! Enjoy!
